Many families maintain a celiac diet, so we share this gluten-free recipe. Also very healthy to leave the consumption of refined flours and to leave the use of wheat or oats.
This recipe is also free of sugar and animal suffering.
Gluten-free, sugar-free and vegan cookies
* 1 cup cornmeal
* 1/2 cup walnuts
* 1/2 cup raisins (replaceable with dates or any dried fruit)
* 3 tbsp coconut oil or whatever they use
* 1 cap of vanilla extract or something that gives it flavor (it can be zest of some citrus)
In a food processor or blender place the nuts, raisins, oil and vanilla extract (or flavor of your choice)
Process. It should form a dough. If it does not form, they can be helped by adding a few tablespoons of water.
Then in a bowl they place the pasta and add the corn flour. It should be a moist dough.
Form small balls and flatten on an oiled plate.
Cook 15 minutes or until the edges of the cookies are golden brown and voila!
