The Gallo Pinto. Costa Rican rice and beans recipe

I was lucky enough to spend part of the summer in Costa Rica. This is the traditional dish that every Tico eats for breakfast, lunch, and probably dinner. I never got used to breakfast, but this is what happened to me to mimic my travels there.


2 cups of cooked white rice
2 cups cooked black beans
1/2 cup bean broth (or vegetable broth)
1/2 onion chopped
1 bell pepper, chopped
2 garlic cloves, minced
2 tablespoons fresh cilantro, minced
2 tablespoons vegetable oil
heavy soy cream, as a topping

Fry the onion and bell pepper in the vegetable oil, about 3 minutes.

Add the garlic and sauté some more.

Pour in the beans and the broth, heat over low heat.

Keep the mixture from drying out.

Add the rice and stir well, gently.

Don't mash the beans!

Season to taste with salt and pepper.

Just before serving, add the cilantro and top with creamed soy if desired.
