Couscous, spinach and feta cheese fritters

You just need a few simple ingredients to create these delicious vegetarian spinach fritters.


  • 300 g of Couscous
  • 250g frozen chopped spinach, thawed
  • 100g mild feta cheese, finely crumbled
  • 1 egg yolk
  • 1 lemon, plus lemon wedges, to serve


  • Step 1
    To prepare couscous, put water and salt in a saucepan and heat. When it starts to boil, add the couscous mixing with a spatula or spoon just enough so that all the couscous is evenly soaked. I repeat, you have to stir as little as possible. Turn off the heat, cover the pan and let it rest for 5 to 7 minutes. Place in a large bowl.
  • Step 2
    Squeeze excess moisture out of the spinach. Grate the lemon (you will need 1 teaspoon of the peel) and squeeze the juice (you will need 1 1/2 tablespoons). Add the spinach, egg yolk, lemon zest, and juice to the couscous. Season and mix. Divide the mixture into 8 servings. With wet hands, form eight patties 6.5 cm wide.
  • Step 3
    Heat a large, greased, nonstick skillet over medium-high heat. Cook burgers for 1-2 minutes on each side or until warm and golden. Serve with lemon wedges.
