Pasta with chickpeas and prawns, the recipe

Forprepare the pasta with chickpeas and shrimpsit is recommended to use a cut of "short pasta", you can also use the so-called "mixed pasta". Choose a pasta that does not overcook so as to give more consistency to this dish. In ourchickpea and shrimp pasta recipe, we propose to use godscavatelli, with a very characteristic shape, feel free to use any cut of "short pasta", even fresh!

Here are the ingredients for 4 people.

  • 350 g of cavatelli
    or mixed pasta or other short pasta
  • 250 g of cooked chickpeas
  • 200g prawns or 18 prawns *
    read the suggestions in the next paragraph
  • 3 ripe tomatoes
  • 4 tablespoons of extra virgin olive oil
  • a sprig of fresh parsley
  • a stick of celery
  • chilli (optional)
  • a clove of holiday

To start, coarsely chop tomatoes and celery. Heat the oil and prepare a light sauce.

Add the cooked chickpeas together with a little cooking water.

Add the peeled shrimp or shrimp.

Add a crushed clove of garlic (you will need a garlic press!) Or, alternatively, a pinch of garlic powder.

Stir and cook over low heat.

Now, if you have chosen fresh pasta, add the fresh pasta directly to the pot with the chickpeas and cook it for a few minutes. If you have chosen the classic dry pasta (mixed pasta or other cut) cook it in boiling water, aside and then finish cooking it in the pot containing chickpeas, tomatoes, prawns, celery and garlic.

If you use dry pasta, adjust the times well because the pot containing chickpeas, shrimps, celery, tomatoes and garlic must never dry out, so while you wait for the pasta to cook you may be forced to turn off or lower the heat to low.

Add the chopped parsley only at the end of cooking. When cooked, arrange the pasta with chickpeas and prawns in small bowls or "soup plates". Garnish with a prawn (as suggested below), a parsley leaf and chopped chilli.

In the chickpea and shrimp pasta version, keep proportions unbalanced in favor of chickpeas which must be more abundant than shrimps. If you want to use large shrimp, you can leave one with shell to use to decorate the dish (perhaps a prawn) and 3 - 4 large peeled shrimp for each dish. For four people, therefore, you will need 16 prawns and 4 prawns to decorate the dish. In case you want to decorate each dish of pasta with chickpeas and prawnswith a large prawn, this will have to be cooked in a pan on the side, perhaps blending it with a little white wine and wetting it with the cooking water from the chickpeas.
