If you have bought fresh tuna and want to cook it at its best, on this page you will find many recipes and instructions to do it. This is how a good fresh tuna is cooked.

Thefresh tuna, at the fish market, it is found whole, or sectioned. If you bought a whole tuna or caught one, you will have it to eat: nothing is thrown away from the tuna! Once gutted and cleaned, from the tuna we get:

The bodano is that cut located just above the belly. It has a lean and compact pulp. How do you cook? It lends itself very well to serving raw (it is the best cut to serve raw tuna), to prepare tuna tartare, tuna carpaccio, or for light cooking such as steamed or rare. Also perfect forsushi, sashimi and nigiri.

The heel is obtained from the terminal part of the tail. If you want to prepare thebaked tuna, in addition to the fillet, the calcagnolo is perfect. It also lends itself well tostewed cooking.

How to cook tuna in the oven

For thebaked tunaI recommend a fillet (better if obtained from the upper part of the fish) or the calcagnolo. Here's how to cook tuna in the oven with our easy recipe.

Calculate that with 800 grams of tuna you get portions for 4 people.

  1. Rinse the tuna under running water and pat it dry with kitchen paper.
  2. With a sharp knife, make holes in the meat. In these holes, insert pieces of rosemary, pieces of garlic and lemon zest.
  3. Wet the tuna with two tablespoons of white wine.
  4. For a more scenic effect, you can secure the tuna with food twine, just like a chop.
  5. Cook the tuna in the oven at 180 degrees for 15 minutes.

For a more "stewed" version, you can seal the cooking container with silver paper ... however, since it is an intact fillet, I do not recommend it. If you like thestewed tunaand look for onerecipead hoc, see the one below.

The fillet ofbaked tuna(without silver paper) can be cooled, passed in water and ice and then cut with slices of various thicknesses and used to prepare an excellent salad of fresh tuna. You can accompany it with white celery, carrot julienne, zucchini and many other vegetables. Perfect if seasoned with apple cider vinegar.

How to cook tuna in a pan

With this recipe you can prepare a good onestewed tuna. Use tuna steaks about 2.5 to 3 cm thick. Avoid thin slices. Forcooking tuna in a panyou will have to:

  1. Rinse the slices and pat them with absorbent kitchen paper.
  2. Secure each slice with food thread (which must pass over its thickness) so as to keep it compact and make it more beautiful even on the plate.
  3. Beforebake the oven in a pan, make a short marinade. On each slice, add lemon juice, oil, crushed garlic and finely chopped rosemary. For a bolder marinade, replace the lemon juice with orange juice and add orange zest.
  4. Add salt and pepper.
  5. Let the slices rest (marinate) for 30 minutes in the refrigerator.
  6. Before cooking, drain the slices by removing the coarser pieces of seasoning.
  7. Cook thetuna in a panfor 3-4 minutes per side.

How to cook tuna on the grill?
If you have a cast iron griddle, grill or barbecue, you can use the same recipe above for cooking tuna in a pan. The only difference is in the cooking times. On the barbecue it will take you 2-3 minutes per side, the same goes for the grill or cast iron plate.

Note: for grilling, the best part to use is the steaks made from the tuna belly!
